ACME HOT SMOKED FISH

Acme produces a wide range of hot smoked (also known as cooked or baked) fish ranging from the ever-popular whitefish to brook trout. Our hot smoking process begins process with the highest quality procured from across the US, South America and many other regions of the world. The fish are first brine cured, then smoked at a higher temperature than our cold smoking process, to produce a moist, flaky, cooked fish with a delicate, smoke flavor. The following Acme Smoked Fish products are certified kosher:

Whitefish – Glistening, golden smoked whitefish is an all-time favorite of Acme customers. Available in whole in jumbo (2.5+ lbs.), large (1.5+lb.) and medium sizes (less than 1.5lb.) as well as in 5 lb. containers of pure whitefish meat and in pre-packed portions ready for retail sale. We also offer a taste-tempting Whitefish Salad.

Baked or Kippered Salmon – Delicious served cold or hot, our succulent Kippered Salmon is as versatile as it is flavorful. Available whole, 1 1/2 to 2lb. cuts, 5lb. boneless recipe ready containers. portions and in pre-packed retail portions. Don’t miss out on delectable Kippered Salmon Salad, too.

Chubs – Caught in fresh, cold North American lakes and smoked to perfection in our New York smokehouse, Acme Chubs are a mild fish with a pleasantly smoky flavor. Chubs come in small or large whole fish portions and pre-packed in pairs for retail sale.

Sable (Alaskan Black Cod) – Acme Sable is caught in northern Pacific waters off Alaska by long line fishermen and transported to our Smokehouse, where it is cured and hot smoked to perfection. Smoked Sable is available as filleted sides (plates), cut sections or pre-sliced packages.

Trout – This full-flavored, freshwater Smoked Brook Trout is available whole or filleted.

Whiting – A soft, moist fish, Acme Smoked Whiting is delicious whole, eaten right off the bone. Also great in recipes and available boneless in 5lb. ready-use containers..

Plain and Peppered Bluefish – Consumers rave about Acme Smoked Bluefish and Acme Peppered Bluefish and with good reason. Our special smoking process turns this high-powered fish into luscious, smoky a palate-pleaser. The Peppered Bluefish has a spicy bite. Available for bulk sale whole and in fillets.

Plain and Peppered Mackerel – High in Omega 3 fatty acids, Acme Smoked Mackerel is not just great-tasting, it’s good for you, too. Available in Plain and Peppered varieties, our Smoked Mackerel comes in bulk fillets.

Hot Smoked Tuna –Acme Hot Smoked Tuna is made from Albacore tuna that is cured and hot smoked, or baked, to bring out the full flavor of the fish with a hint of smoke. Hot Smoked Tuna is available in bulk loins. We also produce Acme Cold Smoked Tuna and Blue Hill Bay Smoked Tuna.
