Hot Smoked Salmon Grain Bowl

Description
This is a delicious and nutritious meal, all in one bowl. Crispy Brussels sprouts, roasted carrots, a grain of your choosing, luscious avocado, and a creamy homemade sauce come together to showcase Acme's honey maple hot smoked salmon center stage!
Ingredients
1/3 cup farro (or your choice of grain)
3/4 cup roasted brussel sprouts
3 roasted carrots
1/2 teaspoon fish sauce
4 ounces Blue Hill Bay Honey Maple Smoked Salmon
2 tablespoons sauerkraut
Half avocado, cubed
¼ cup rice vinegar
1 tablespoon sesame oil
1 tablespoon tamari
2 tablespoons lime juice
½ tablespoon grated ginger
2 tablespoons cilantro
2 tablespoons mint
Instructions
Step 1:
Preheat the oven to 400. Distribute your brussels sprouts and carrots on a small, lightly-oiled cookie sheet. Once the oven reaches themperature, roast your vegetables.
Step 2:
Pour farro into a pot of boiling, salted water. Once the farro is fully submerged and mixed with the boiling water, reduce heat to low. Simmer covered for 25-30 minutes, until tender.
Step 3:
Prepare your sauce. In a small mixing bowl, mix the fish sauce, rice vinegar, sesame oil, tamari, and lime juice. Add the ginger and herbs. Mix until thoroughly combined. Set sauce aside.
Step 4:
Assemble your bowl. Put your cooked farro at the bottom of the bowl and top with honey maple hot smoked salmon, roasted brussel sprouts, roasted carrots, sauerkraut, and avocado. Drizzle the sauce over the bowl. Top with any leftover herbs.
