Description

Ingredients

1 cantaloupe (cut into wedges or cubes)
1 tablespoon white wine vinegar
4 oz. goat cheese (crumbled)

Instructions

In a bowl, toss the melon with vinegar.

Arrange the melon pieces on a plate, schmear a small crumble of goat cheese on each piece, and lay the smoked salmon over the melon pieces.

Crumble the remaing goat cheese on top and serve immediately.
