Pastrami Smoked Salmon Festive Bites

Description
Sweet and tangy pomegranate seeds, salty and creamy goat cheese, and our rich and peppery pastrami smoked salmon come together to form the perfect finger food for before any big meal. Not to mention the fact that this dish offers the added bonus of showcasing some festive colors! Feel free to use pre-baked tart shells or any sort of store-bought cracker or wafer (like pictured above). Feeling fancy? Make your own tarts or crackers from scratch!
Ingredients
24 crackers (we suggest Trader Joe's Rosemary Sfogliette Crackers)
8 ounces of Acme Smoked Fish Pastrami Smoked Salmon cut into roughly 1 1/2 inch strips
5 ounces (just over a 1/2 cup) of goat cheese (room temperature)
2 tablespoons of honey
1 cup pomegranate arils (this requires just over 1/2 a pomegranate)
Instructions
Step 1
Remove all 24 crackers from their packaging, and loosely arrange them on the plate or platter on which they will be served.
Step 2
Place strips of pastrami smoked salmon on on each cracker. Fold each strip of salmon over onto itself slightly so as to fully fit the salmon on the cracker, as well as for presentation purposes.
Step 3
Lightly mix the goat cheese (brought to room temperature) with the honey until just combined. Top the salmon with a small dollop of the goat cheese and honey mixture.
Step 4
Top each cracker, salmon, and goat cheese bite with 4-6 pomegranate arils.
Step 5
Rearrange the crackers on the serving plate or platter (if necessary) and then either serve immediately or store covered in the fridge until about 30 minutes before serving.
