Preheat oven to 500°F/broil.
Place crackers on a sheet tray.
Mix the smoked whitefish and celery together.
Put 1 teaspoon of whitefish salad in the center of each cracker, and top with ½ teaspoon of pimento cheese. Broil for 1 minute, or until warm and the cheese begins to melt. Remove from tray and let cool.
Garnish with a piece of chopped pickle on top, and a dash of hot sauce, as you’d like.
