PIMENTO CHEESE & SMOKED WHITEFISH SALAD CRACKER MELTS

Description

Small in size, but rich in flavor, these bite sized smoked whitefish salad cracker melts pack a punch when topped with sharp pimento cheese. 

Ingredients

8 ounces Whitefish salad
1 Stalk celery (diced)
4 ounces Pimento cheese (store bought or homemade)
8 ounces Wheat crackers (about 1 1/2 x 1 1/2 inches)
2 ounces Bread and butter pickles (chopped, to garnish)
Optional: Your favorite hot sauce

Instructions

Preheat oven to 500°F/broil.

Place crackers on a sheet tray.

Mix the smoked whitefish and celery together.

Put 1 teaspoon of whitefish salad in the center of each cracker, and top with ½ teaspoon of pimento cheese. Broil for 1 minute, or until warm and the cheese begins to melt. Remove from tray and let cool.

Garnish with a piece of chopped pickle on top, and a dash of hot sauce, as you’d like.
