Meal Theme: No Cook / Sandwiches

A simple appetizer or main meal for any event.
3 tablespoons Dijon mustard
8 slices Rye bread (8oz package)
1 Small granny smith or other tart green apple (sliced thin)
2 Alaskan black cod (AKA Sable, by Blue Hill Bay )
1⁄4 cup Dried cranberries
Stir together the mayonnaise and dijon until combined. Divide the dijon mayo evenly amongst 4 of the slices of rye bread. Fan out the thinly sliced green apple over the mayo. Place 2 oz slices of Blue Hill Bay Alaskan Black Cod over the apple. Scatter the dried cranberries over the fish and top with the baby spinach and remaining slices of rye bread.
