Sablefish on Rye with Apple, Cranberry and Dijon

For those who know that a sandwich is never just a sandwich, our smoked sablefish on rye with apple, cranberry, and dijon mustard is perfect as a light meal, or a main event! Does this smoked fish sandwich have it all? No, but for those who love smoked sablefish, it has everything that you need. Sablefish, not as widely consumed as its smoked fish friend (smoked salmon) is uniquely perfect for this combination of flavors. The firm, yet delicate, texture of smoked sablefish, combined with the silky dressing of mayonnaise and dijon mustard, cut with tart and sweet apple slices and dried cranberries, is cradled in baby spinach and sandwiched between slices of rye. Directions

Stir together the mayonnaise and dijon mustard until combined. Divide the dijon mayo evenly amongst 4 of the slices of rye bread. Fan out the thinly sliced green apple over the mayo.

Place 2 slices of Blue Hill Bay Alaskan Black Cod over the apple. Scatter the dried cranberries over the fish and top with the baby spinach and the remaining slices of rye bread.
