Smoked Salmon & Potato Pancakes

Great for the holidays, or as an every day appetizer, this is an Acme favorite. Top this traditional treat with any variety of smoked salmon, or mix and match flavors to make it even more festive.

Directions

Preheat oven to 450 degrees Fahrenheit.

Peel the potatoes and coarsely grate with a food processor. Mix the potatoes and scallions together in a bowl. Scoop about 1/4 cup of potato mixture and make small pancakes.

Place a tablespoon of oil and 1/2 tablespoon of butter in a medium sized pan, set to medium heat. Place the made pancakes into the heated pan. Reduce heat to low medium and press down on the pancakes to keep together, wait until golden brown on either side (about 6-8 minutes for each side).

Drain on paper towels then place on a baking sheet. (To reheat, place in the oven for about 3-5 minutes.)

Finally, top the potato pancakes with smoked salmon, onions, capers and creme fraiche
