Smoked Salmon Prosperity Salad

The prosperity salad is a traditional dish in any Lunar New Year spread. It typically consists of fresh ingredients and vibrant vegetables including carrot, radish, ginger, cucumber, pepper, shallots, and more! This Acme Smoked Fish version includes our Nova smoked salmon as the protein. Together, family and friends gather during the Chinese New Year to toss and mix the prosperity salad which is meant to welcome in well wishes for the coming year.

Directions

Whisk hoisin sauce, soy sauce, sesame seeds, five-spice powder, sesame oil, and cinnamon in a mixing bowl. Season with salt, to taste, and set aside.

Pour oil into a deep skillet until it comes up about 2-3 inches from the bottom of the pan. Use more oil if necessary. Heat oil over medium-high. When the oil appears to have reached temperature (the oil should be about 350°F) add 1 wonton strip. Once wonton strip begins to sizzle around the edges and starts to turn an amber-gold and shrivel, the oil is hot enough.

Working in batches, fry wonton strips until crisp and golden. This should take about 30–45 seconds. Using a slotted spoon, transfer the wonton strips to paper towels to drain.

Place the smoked salmon in the center of a large platter (place the smoked salmon with the vegetables on the outer edge of the platter if preparing the recipe using Step 5). Arrange cucumbers, pears, grapefruit, carrot, radish, bell pepper, pickled ginger, sliced shallots, and fried wonton strips around salmon. Drizzle reserved sauce over and toss together with your guests before serving.
