SMOKED SALMON TARTARE WITH GINGER, CILANTRO, AND JALAPENO

Description

A spicy rendition of a classic smoked salmon tartare. This smoked salmon side dish or appetizer makes a great party snack, even for parties of one. Jalapeno spice and a ginger kick complement smooth and salty smoked salmon, creating a dish as appropriate for making a meal on a bagel as for sharing as an h'ordeuvres. Try serving this dish with rice crackers, but being as it's smoked salmon, bagel chips are also encouraged, and potato chips make a delightful choice as well.

Ingredients

16 ounces cold smoked salmon (finely chopped)
2 tablespoons fresh lemon juice (add more for garnish)
1 teaspoon diced jalapeno (seeded and finely chopped)
2 bunches scallions (finely chopped)
1⁄2 teaspoon grated fresh ginger
2 tablespoons fresh cilantro (finely chopped, add more for garnish)
1 teaspoon toasted sesame seeds
2 tablespoons canola oil
1 dash coarse salt and freshly ground pepper (to taste)
1 teaspoon toasted sesame oil

Instructions

In a bowl, combine salmon, lemon juice, jalapeno, scallion, ginger, cilantro, sesame seeds and sesame oil and canola oil. Mix gently to combine. Season with salt and pepper. Divide salmon tartare among six plates. Garnish with lemon juice. Serve with potato chips or rice crackers.

As an alternative preparation and presentation, in a small bowl, combine lemon juice, jalapeno, scallion, ginger, cilantro, sesame seeds and sesame oil and canola oil. Mix to combine. Season with salt and pepper. Place a ring mold in the center of a dish and fill with chopped salmon. Top with jalapeno scallion mixture. Remove the mold and serve with potato chips or rice crackers.
