Super Nova Bagel

The Super Nova Bagel embodies the simple elegance of two classic favorites within the confines of one sandwich. Nova smoked salmon and smoked whitefish salad, layered delicately with each ingredient in just the right proportion to its counterpart, all enclosed within a poppy seed bagel. Crisp red onions add a subtle bite, juicy slicing tomatoes add a richness that is both fruity and vegetal, and cool cucumber slices bring a certain refreshing quality to this dish. Finally, a garnish of pickled caper berries ties the whole meal together. This is a two-handed sandwich that can feed one hungry person, or can be split by two when feeding more modest appetites.
1 bagel (we suggest poppy seed, but use whatever favorite bagel variety you wish)
2 ounces Acme Smoked Fish Smoked Whitefish Salad
2 ounces Acme Smoked Fish Nova Smoked Salmon
1 slice red onion (onion cut against the grain in full transverse cut)
4 slices cucumber
1 teaspoon nonpareil capers
2-3 slices tomato, cut to a medium thickness
Cut the bagel in half, and then lightly toast (if desired). Schmear each side of the bagel with the smoked whitefish salad. Stack the bagel with smoked salmon, sliced vegetables, and then garnish with the capers. Close the bagel. Enjoy!
